Instructions
- Prepare the peanut sauce by whisking together all of the sauce ingredients in a medium bowl.
- Mix together the slaw ingredients in a separate bowl, then pour the peanut sauce over it and toss to combine.
- Prepare the crispy tofu by cutting it into small 1-inch cubes and tossing in soy sauce.
- In another bowl, mix cornstarch and garlic powder.
- Heat a non-stick skillet with olive oil until very hot.
- Coat the tofu in the cornstarch mixture and add it to the skillet.
- Cook the tofu until browned, about 3 minutes, then flip and cook for another few minutes.
- Let the tofu cool, then assemble the wraps by spreading slaw on the lavash or tortilla, adding tofu, and rolling it up.
- Slice in half, dip in peanut sauce, and enjoy.
