Ingredients

Peanut Sauce

  • ¼ Cup Creamy Peanut Butter
  • Cup Honey
  • Cup Olive Oil
  • 2 Tablespoons Sesame Oil
  • 3 Tablespoons Rice Vinegar
  • 1 ½ Tablespoons Soy Sauce
  • 2 Cloves Garlic

Slaw

  • 1 Package Coleslaw Mix
  • ½ Cup Shredded Carrots
  • ¼ Cup Cilantro
  • ¼ Cup Crushed Peanuts

Crispy Tofu

  • 1 Package Extra-Firm Tofu
  • 2 Tablespoons Soy Sauce
  • 3 Tablespoons Cornstarch
  • 1 Teaspoon Garlic Powder
  • 3 Tablespoons Olive Oil
  • as needed Lavash or Tortillas

Instructions

  1. Prepare the peanut sauce by whisking together all of the sauce ingredients in a medium bowl.
  2. Mix together the slaw ingredients in a separate bowl, then pour the peanut sauce over it and toss to combine.
  3. Prepare the crispy tofu by cutting it into small 1-inch cubes and tossing in soy sauce.
  4. In another bowl, mix cornstarch and garlic powder.
  5. Heat a non-stick skillet with olive oil until very hot.
  6. Coat the tofu in the cornstarch mixture and add it to the skillet.
  7. Cook the tofu until browned, about 3 minutes, then flip and cook for another few minutes.
  8. Let the tofu cool, then assemble the wraps by spreading slaw on the lavash or tortilla, adding tofu, and rolling it up.
  9. Slice in half, dip in peanut sauce, and enjoy.
