Instructions
- Cut tofu into 8 slices and then into triangles.
- Heat oil in a skillet over medium-high heat and cook tofu until golden and crispy, about 5 minutes on each side.
- Transfer tofu to a plate lined with paper towels to absorb excess oil.
- Whisk together all ginger peanut sauce ingredients, adjusting thickness with coconut milk or water as needed.
- Heat sandwich wraps according to package instructions until pliable.
- Assemble sandwiches by placing tofu, carrot, red pepper, green onion, cilantro, and peanut sauce on each wrap, then fold.
- Serve with lime wedges if desired.
