Ingredients

Crispy Tofu

  • 1 14 oz. package extra-firm tofu pressed for 30 minutes
  • 1 tbsp. vegetable or peanut oil

Ginger Peanut Sauce

  • 6 tbsp. creamy peanut butter
  • 2 tbsp. rice vinegar
  • 1 tbsp. soy sauce
  • 2-3 tsp. light brown sugar to taste
  • 1 tbsp. ginger juice
  • to taste cayenne (optional)
  • 1 tbsp. lite coconut milk or water

Sandwiches

  • 1 small carrot peeled and shredded
  • 1 small sweet red pepper sliced
  • ΒΌ c. sliced green onion
  • 2 tbsp. chopped cilantro
  • 4 pieces sandwich wraps (pitas, tortillas, or naan)
  • to taste lime wedges (optional)

Instructions

  1. Cut tofu into 8 slices and then into triangles.
  2. Heat oil in a skillet over medium-high heat and cook tofu until golden and crispy, about 5 minutes on each side.
  3. Transfer tofu to a plate lined with paper towels to absorb excess oil.
  4. Whisk together all ginger peanut sauce ingredients, adjusting thickness with coconut milk or water as needed.
  5. Heat sandwich wraps according to package instructions until pliable.
  6. Assemble sandwiches by placing tofu, carrot, red pepper, green onion, cilantro, and peanut sauce on each wrap, then fold.
  7. Serve with lime wedges if desired.
