Ingredients

The tart base

  • cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¾ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter
  • 1 cup white granulated sugar
  • 3 large eggs
  • ½ cup chopped semisweet chocolate

The pears

  • 1½ to 2 pieces Anjou pears

For dusting (optional)

  • to taste confectioners' sugar

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch tart pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, ginger, cinnamon, and salt.
  3. In a separate bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Combine the dry ingredients with the wet mixture until just combined.
  6. Fold in the chopped chocolate and spread the batter into the prepared pan.
  7. Arrange the sliced pears on top of the batter without overlapping too much.
  8. Bake for 20-25 minutes until slightly puffed and a toothpick comes out clean.
  9. Let cool slightly before removing from the pan and serving.
