Instructions
- Preheat the oven to 375°F.
- In a stand mixer, beat together butter and sugar until mixed, then add the egg and yolk.
- Slowly incorporate flour and cream until a dough forms.
- Press the dough into a tart pan, keeping it about ¼ inch thick, and freeze for 10-15 minutes.
- Cover the crust with parchment and fill with pie weights, then bake for 15 minutes.
- Remove the weights, prick the crust, and bake for an additional 10 minutes.
- Prepare the filling by peeling, halving, and slicing the pears, then mix eggs, yolks, sugar, vanilla, cinnamon, and cream until combined.
- Sprinkle chocolate over the baked crust and let it melt, then spread it evenly.
- Arrange the sliced pears in a fan shape on top of the chocolate.
- Pour the custard filling over the pears until near the top of the tart pan.
- Bake for about 45 minutes until the custard is set and golden brown.
- Cool the tart and prepare the topping by heating cream and whisking it with chocolate until smooth.
- Drizzle the ganache over the cooled tart and serve at room temperature.
