Ingredients

The crust

  • 1 cup butter, at room temperature
  • ½ cup sugar
  • 1 whole egg
  • 1 yolk egg yolk
  • 2 ⅔ cups all-purpose flour
  • 1-2 tablespoons heavy cream

The filling

  • 3 ounces AMERICAN HERITAGE CHOCOLATE®, grated or finely chopped
  • 4 whole ripe but firm pears
  • 2 whole eggs
  • 2 yolks egg yolks
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • 1 ½ cups heavy cream

The topping

  • 1 ounce AMERICAN HERITAGE CHOCOLATE®, grated or finely chopped
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 375°F.
  2. In a stand mixer, beat together butter and sugar until mixed, then add the egg and yolk.
  3. Slowly incorporate flour and cream until a dough forms.
  4. Press the dough into a tart pan, keeping it about ¼ inch thick, and freeze for 10-15 minutes.
  5. Cover the crust with parchment and fill with pie weights, then bake for 15 minutes.
  6. Remove the weights, prick the crust, and bake for an additional 10 minutes.
  7. Prepare the filling by peeling, halving, and slicing the pears, then mix eggs, yolks, sugar, vanilla, cinnamon, and cream until combined.
  8. Sprinkle chocolate over the baked crust and let it melt, then spread it evenly.
  9. Arrange the sliced pears in a fan shape on top of the chocolate.
  10. Pour the custard filling over the pears until near the top of the tart pan.
  11. Bake for about 45 minutes until the custard is set and golden brown.
  12. Cool the tart and prepare the topping by heating cream and whisking it with chocolate until smooth.
  13. Drizzle the ganache over the cooled tart and serve at room temperature.
