Ingredients

  • 2 cups self rising cake flour
  • ½ tsp baking soda
  • 3 tablespoons unsalted butter
  • ¾ cup sugar
  • 3 large egg whites
  • 8 oz fat free ricotta cheese
  • ½ tbsp vanilla
  • 9 tbsp mini semi-sweet chocolate chip morsels

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with liners.
  2. In a medium bowl, mix the flour and baking soda.
  3. In a large bowl, cream the butter and sugar using a hand mixer.
  4. Beat the egg whites in a small bowl and add them to the butter and sugar mixture.
  5. Mix in the ricotta cheese, then add the flour mixture and vanilla, mixing well.
  6. Fold in the chocolate chips and spoon the mixture into the lined muffin tins, filling them about ¾ full.
  7. Bake at 375°F for 15-18 minutes and let cool.
