Ricotta Cheese Chocolate Chip Muffins

Instructions
- Preheat the oven to 375°F and line a muffin tin with liners.
- In a medium bowl, mix the flour and baking soda.
- In a large bowl, cream the butter and sugar using a hand mixer.
- Beat the egg whites in a small bowl and add them to the butter and sugar mixture.
- Mix in the ricotta cheese, then add the flour mixture and vanilla, mixing well.
- Fold in the chocolate chips and spoon the mixture into the lined muffin tins, filling them about ¾ full.
- Bake at 375°F for 15-18 minutes and let cool.
