Ingredients

  • 1 cup brown or green lentils
  • 2 medium carrots, chopped
  • 4 stalks celery, chopped
  • ½ onion chopped
  • 10 ounces Italian or Polish sausage, sliced
  • 4 cups reduced-sodium vegetable or chicken broth
  • 1 teaspoon dried thyme
  • ¼ teaspoon ground black pepper
  • 1 lemon juiced

Instructions

  1. Prepare the lentils, vegetables, and sausages by rinsing the lentils and chopping the veggies and sausages.
  2. Combine all ingredients in the Instant Pot and lock the lid.
  3. Set to cook at high pressure for 10 minutes.
  4. Allow pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
  5. Remove the lid and stir in pepper and lemon juice.
  6. Serve the soup hot.
