Ingredients

The meatballs

  • 2 cups prepared brown and wild rice
  • 1 cup cooked lentils
  • 1 clove garlic, minced
  • ½ teaspoon cumin
  • cup flour
  • 3 tablespoons seasoned breadcrumbs
  • to taste olive oil

The sauce and topping

  • to taste marinara or tomato sauce
  • to taste cheese

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a bowl, mix the rice, lentils, garlic, and cumin, then add the flour and breadcrumbs to create a crumbly mixture.
  3. Wet your hands and form the mixture into small egg-shaped balls, adding oil or water as needed to help them stick together.
  4. Place the meatballs on a baking sheet and drizzle with oil.
  5. Bake for 20 minutes, turning and adding more oil as necessary until they are toasted on the outside.
  6. Remove from the oven, place in individual oven-safe bowls, cover with tomato sauce and cheese, and bake on high broil until heated through and cheese is melted.
