Cozy Lemon Chicken & Rice Soup

Ingredients

The Soup

  • 2-3 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, mashed
  • 1 ½ cups arborio rice, uncooked
  • 8 cups chicken broth or bone broth
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon dried oregano
  • ½ cup lemon juice + zest of 2 lemons
  • 2 large eggs
  • 2 large egg yolks
  • ¾ pound cooked boneless, skinless chicken breast, shredded
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper

For Garnishing

  • to taste chopped parsley
  • to taste Aleppo pepper
  • to taste fresh or dry dill

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté diced onions for about 6-7 minutes until translucent, then add mashed garlic and sauté for another 2 minutes.
  3. Add uncooked rice, broth, thyme, and oregano; reduce heat to low, cover, and simmer for 20-25 minutes.
  4. In a separate bowl, whisk together eggs, egg yolks, lemon zest, and lemon juice until fully incorporated.
  5. Ladle about 1 ¾ cups of soup into the egg mixture slowly while whisking to prevent curdling.
  6. Blend the egg mixture until smooth, then pour back into the pot with the rest of the soup.
  7. Add shredded chicken and season with salt and pepper to taste.
  8. Garnish with parsley, dill, and Aleppo pepper if desired, then serve.
