Cozy Lemon Chicken & Rice Soup

Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté diced onions for about 6-7 minutes until translucent, then add mashed garlic and sauté for another 2 minutes.
- Add uncooked rice, broth, thyme, and oregano; reduce heat to low, cover, and simmer for 20-25 minutes.
- In a separate bowl, whisk together eggs, egg yolks, lemon zest, and lemon juice until fully incorporated.
- Ladle about 1 ¾ cups of soup into the egg mixture slowly while whisking to prevent curdling.
- Blend the egg mixture until smooth, then pour back into the pot with the rest of the soup.
- Add shredded chicken and season with salt and pepper to taste.
- Garnish with parsley, dill, and Aleppo pepper if desired, then serve.
