Instructions
- Drain the soaked butter beans and place them in a large pot with vegetable broth, water, and bay leaves.
- Bring the mixture to a boil, then simmer on medium-low heat for about 90 minutes, stirring occasionally, until the beans are tender.
- Once cooked, remove bay leaves and reduce heat to low, then stir in garlic, tomato paste, basil, oregano, rosemary, smoked paprika, and cayenne pepper.
- Cook for 1 minute until the spices are fragrant, then add the kale and olive oil.
- Cook for an additional 5 minutes until the kale is tender, then serve or store for later.
