Ingredients

The beans

  • 1 cup dry butter beans (soaked)
  • 3 cups vegetable broth
  • 1 cup water (or as needed)
  • 2 pieces bay leaves (optional)

The flavorings

  • 4 cloves garlic (grated)
  • 1 tablespoon tomato paste
  • 1 teaspoon dry basil
  • 1 teaspoon dry oregano
  • 1 teaspoon crushed rosemary
  • 1 teaspoon smoked paprika
  • ΒΌ teaspoon cayenne pepper (optional)

The greens

  • 3 cups torn kale leaves (1-pound bunch)

The oil

  • 1 tablespoon extra virgin olive oil

Instructions

  1. Drain the soaked butter beans and place them in a large pot with vegetable broth, water, and bay leaves.
  2. Bring the mixture to a boil, then simmer on medium-low heat for about 90 minutes, stirring occasionally, until the beans are tender.
  3. Once cooked, remove bay leaves and reduce heat to low, then stir in garlic, tomato paste, basil, oregano, rosemary, smoked paprika, and cayenne pepper.
  4. Cook for 1 minute until the spices are fragrant, then add the kale and olive oil.
  5. Cook for an additional 5 minutes until the kale is tender, then serve or store for later.
