Puglia Fava Beans and Greens

The beans

dried fava beans (or cannellini, flageolet, or white beans)
The broth
The aromatics

extra virgin olive oil, divided

red chili flakes

oregano, dried

The greens

large bunch
fresh dandelion greens or chicory, coarsely chopped (or substitute mustard greens)
Instructions
- Soak the beans overnight in a large pot or Dutch oven covered with water.
- Drain the beans and return them to the pot, adding broth, water, 1 tablespoon of olive oil, onion, garlic, red chili flakes, oregano, salt (if using), and black pepper.
- Cover and simmer over medium heat for about 1½ hours, stirring frequently until the beans are soft and tender.
- Mash the beans in the pot to create a thick mixture, adding more hot water if necessary.
- Add the chopped greens on top of the beans, cover, and let simmer for 5 minutes without stirring to wilt the greens.
- Drizzle with the remaining tablespoon of olive oil and serve immediately.
