Puglia Fava Beans and Greens

Ingredients

The beans

  • 8 ounces dried fava beans (or cannellini, flageolet, or white beans)

The broth

  • 4 cups broth
  • 1 cup water

The aromatics

  • 2 tablespoons extra virgin olive oil, divided
  • 1 medium onion, diced
  • 4 cloves garlic, minced

The seasonings

  • ½ teaspoon red chili flakes
  • 1 tablespoon oregano, dried
  • ½ teaspoon salt (optional)
  • ¼ teaspoon black pepper

The greens

  • 1 large bunch fresh dandelion greens or chicory, coarsely chopped (or substitute mustard greens)

Instructions

  1. Soak the beans overnight in a large pot or Dutch oven covered with water.
  2. Drain the beans and return them to the pot, adding broth, water, 1 tablespoon of olive oil, onion, garlic, red chili flakes, oregano, salt (if using), and black pepper.
  3. Cover and simmer over medium heat for about 1½ hours, stirring frequently until the beans are soft and tender.
  4. Mash the beans in the pot to create a thick mixture, adding more hot water if necessary.
  5. Add the chopped greens on top of the beans, cover, and let simmer for 5 minutes without stirring to wilt the greens.
  6. Drizzle with the remaining tablespoon of olive oil and serve immediately.
