Sautéed Fava Beans

Instructions
- Shuck the fava beans by removing the outer pod.
- Blanch the fava beans in boiling salted water for 15-20 seconds, then place them in ice water.
- Remove the tough outer peel from the larger fava beans, which will take about 15-20 minutes.
- In a skillet, heat olive oil over medium heat, add shallot and pepper, and sauté until tender.
- Add the fava beans and broth, simmer gently for 3-4 minutes until tender, then season with lemon zest, lemon juice, and salt.
- Garnish with fresh mint leaves and shaved cheese, then serve warm or at room temperature.
