Sautéed Fava Beans

Ingredients

The beans

  • 2 lbs fava beans (in the pod)

The sauté

  • 2 tablespoons olive oil
  • 1 medium shallot, finely diced
  • ¼ cup veggie broth or chicken stock or water
  • to taste salt
  • to taste pepper
  • lemon zest
  • lemon juice
  • fresh mint
  • to taste Ricotta Salata or sub pecorino, parmesan, manchego
  • drizzle of olive oil

Instructions

  1. Shuck the fava beans by removing the outer pod.
  2. Blanch the fava beans in boiling salted water for 15-20 seconds, then place them in ice water.
  3. Remove the tough outer peel from the larger fava beans, which will take about 15-20 minutes.
  4. In a skillet, heat olive oil over medium heat, add shallot and pepper, and sauté until tender.
  5. Add the fava beans and broth, simmer gently for 3-4 minutes until tender, then season with lemon zest, lemon juice, and salt.
  6. Garnish with fresh mint leaves and shaved cheese, then serve warm or at room temperature.
