Ingredients

The fava beans

  • 20–30 pieces fresh fava beans (in the pod)
  • to coat none olive oil
  • generous pinch none salt

The dressing

  • 3 tablespoons olive oil
  • 1 clove garlic (finely minced)
  • 1 tablespoon shallot (finely chopped, optional)
  • 1 medium lemon (zest)
  • ½ teaspoon salt
  • 1 teaspoon sumac

The garnish

  • ¼ cup fresh mint (chopped)
  • ¼ cup Italian parsley
  • ½ teaspoon aleppo chili (or regular chili flakes, optional)
  • to taste none lemon (squeeze, optional)

Instructions

  1. Preheat the grill to medium-high.
  2. Coat the fava beans lightly with olive oil and sprinkle with salt.
  3. Grill the fava beans for 4-5 minutes on each side until charred.
  4. Spread the grilled beans on a platter and spoon the dressing over them.
  5. Sprinkle with fresh mint, parsley, and aleppo chili flakes.
  6. Taste and adjust seasoning with salt or lemon juice as desired.
  7. Serve and enjoy with your fingers, like edamame.
