Ingredients

The fava beans

  • 1 pound fresh fava beans, still in their pods

The seasoning

  • a couple glugs olive oil
  • a few pinches salt
  • to taste crushed red pepper flakes (optional)
  • to taste lemon zest (optional)
  • to taste chopped fresh herbs (optional)

Instructions

  1. Toss the fava bean pods with olive oil and salt in a large bowl.
  2. Arrange the pods in a single layer on a grill over medium-high heat.
  3. Grill the pods for 4 to 5 minutes until blistered on one side, then flip and grill for a few minutes more.
  4. Check doneness by tasting a bean from a pod; it should be smooth and creamy.
  5. Remove from the grill and season with more salt and any optional herbs or lemon zest.
  6. To eat, tear open the pods and slide the fava beans from their skins.
