Instructions
- Bring salted water to a boil and blanch the shelled fava beans for about 3 minutes until bright green.
- Drain the beans and rinse them under ice-cold water.
- Optionally, peel off the second skin from the beans.
- In a jar, combine vinegar, olive oil, minced garlic, herbs, salt, and pepper, and shake to mix.
- Add the fava beans to the jar, shake to coat, and refrigerate until ready to use.
- To preserve, ensure the beans are submerged in the marinade, adding more oil and vinegar as needed.
