Instructions
- Drain and rinse the butter beans in a colander.
- Chop the parsley leaves roughly after rinsing and draining.
- In a bowl, combine the rinsed beans, chopped parsley, olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Stir until well mixed and adjust salt if needed.
- Refrigerate until ready to serve.
