Ingredients

The salad

  • 2 15oz cans butter beans
  • 1 tbsp olive oil
  • cup diced red onion
  • ¼ cup minced fresh parsley
  • 2 hardboiled eggs diced

The dressing

  • 3 tbsp olive oil
  • 3 cloves garlic
  • 1 juice lemon
  • 1 tsp dijon mustard
  • ¼ tsp chili flakes
  • 1 tbsp liquid honey
  • 1 tsp salt

Instructions

  1. Whisk together the dressing ingredients in a small bowl and set aside.
  2. Heat olive oil in a frying pan over medium heat, then add the butter beans and a pinch of salt.
  3. Cook the beans for 4-5 minutes, stirring occasionally, until warmed through.
  4. Transfer the beans to a bowl and add the diced onion, parsley, and hardboiled eggs.
  5. Drizzle the dressing over the mixture, toss to combine, and adjust seasoning if needed.
  6. Serve and enjoy.
