Ingredients

Dressing

  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried herbs of choice
  • to taste salt
  • to taste freshly cracked black pepper

Salad

  • 1 15-ounce can white beans
  • ½ one red onion
  • 1 medium English cucumber
  • 1 cup cherry tomatoes
  • to taste fresh herbs for serving

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, dried herbs, salt, and black pepper until fully incorporated.
  2. Add the white beans, red onion slices, cucumber, and cherry tomatoes to the bowl.
  3. Stir well to coat the beans and vegetables in the dressing mixture.
  4. Serve the salad immediately, or cover and refrigerate for at least 1 hour before serving.
  5. Garnish with fresh herbs just before serving.
