Instructions
- Whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to make the vinaigrette.
- Rinse and drain the cannellini beans.
- Thinly slice the red onion and roughly chop the parsley.
- Combine the beans, onions, and parsley in a bowl, then pour the vinaigrette over the top and stir to combine.
- Taste and adjust the salt or pepper as needed.
- Serve immediately or chill in the refrigerator before serving.
