Lemony White Bean Salad

Ingredients

  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • ½ Tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • tsp salt
  • tsp freshly cracked black pepper
  • 2 15 oz. cans cannellini beans
  • ¼ red onion thinly sliced
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to make the vinaigrette.
  2. Rinse and drain the cannellini beans.
  3. Thinly slice the red onion and roughly chop the parsley.
  4. Combine the beans, onions, and parsley in a bowl, then pour the vinaigrette over the top and stir to combine.
  5. Taste and adjust the salt or pepper as needed.
  6. Serve immediately or chill in the refrigerator before serving.
