Mediterranean White Bean Salad

Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp freshly cracked black pepper
  • 2 15 oz. cans butter beans
  • ½ bunch fresh parsley
  • 1 pint grape tomatoes
  • 2 oz. feta cheese

Instructions

  1. Prepare the dressing by combining olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl.
  2. Rinse and drain the canned beans and let them drain while preparing the other ingredients.
  3. Finely chop about 1 cup of fresh parsley and cut the grape tomatoes in half.
  4. In a bowl, combine the drained beans, chopped parsley, halved tomatoes, and crumbled feta cheese.
  5. Pour the prepared dressing over the salad and stir to combine.
  6. Serve immediately or refrigerate for up to four days.
