Instructions
- Prepare the dressing by combining olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl.
- Rinse and drain the canned beans and let them drain while preparing the other ingredients.
- Finely chop about 1 cup of fresh parsley and cut the grape tomatoes in half.
- In a bowl, combine the drained beans, chopped parsley, halved tomatoes, and crumbled feta cheese.
- Pour the prepared dressing over the salad and stir to combine.
- Serve immediately or refrigerate for up to four days.
