Ingredients

The salad

  • 1 15.5-ounce can garbanzo beans
  • 1 15-ounce can black beans
  • 1 cup chopped grape tomatoes
  • 1 large garlic clove, finely minced
  • ½ cup chopped red onion
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint

The dressing

  • tablespoons olive oil
  • Juice from 1 medium lemon lemon juice
  • ½ teaspoon kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Combine the beans, tomatoes, garlic, onion, parsley, and mint in a large bowl.
  2. In a small bowl, whisk together the olive oil and lemon juice until emulsified.
  3. Pour the dressing over the salad ingredients, add salt and pepper to taste, and toss gently.
  4. Let the salad sit at room temperature for 30 minutes to allow the flavors to combine.
