White Bean Salad
Ingredients

big handfuls
baby spinach

white cannellini beans

handfuls
walnuts

a couple glugs
of
citrus-flavored olive oil

a small splash
of
champagne vinegar

a few pinches
of
fine-grained sea salt

a bit of
crumbled
cheese (manouri or goat cheese)
Instructions
- Rinse and drain the beans.
- If desired, warm the beans by running them under hot water.
- In a large bowl, combine the spinach, beans, and walnuts.
- Add the olive oil, champagne vinegar, and salt, then toss gently to coat.
- Sprinkle cheese on top and serve.
