Lemony White Bean Quinoa Salad

Ingredients

  • cups cooked quinoa
  • 1 15 oz. can white beans, drained and rinsed
  • ½ cup finely chopped parsley
  • 2 Tbsp lemon juice
  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp finely chopped red onion
  • 2-3 small cloves garlic, minced
  • ½-¾ tsp sea salt
  • ½ tsp ground black pepper
  • ¼ tsp red pepper flakes

Instructions

  1. Cook quinoa if not using pre-cooked; combine dry quinoa and water, bring to boil, then simmer until water is absorbed.
  2. In a mixing bowl, combine white beans, parsley, lemon juice, olive oil, onion, garlic, salt, black pepper, and red pepper flakes; stir and let marinate for 15-20 minutes.
  3. Add cooked quinoa to the marinated mixture and stir to combine; adjust seasoning as needed.
  4. Serve chilled or at room temperature; leftovers can be stored in the refrigerator for up to 2-3 days.
