Lemony White Bean Quinoa Salad

Instructions
- Cook quinoa if not using pre-cooked; combine dry quinoa and water, bring to boil, then simmer until water is absorbed.
- In a mixing bowl, combine white beans, parsley, lemon juice, olive oil, onion, garlic, salt, black pepper, and red pepper flakes; stir and let marinate for 15-20 minutes.
- Add cooked quinoa to the marinated mixture and stir to combine; adjust seasoning as needed.
- Serve chilled or at room temperature; leftovers can be stored in the refrigerator for up to 2-3 days.
