Ingredients

The salad

  • 1 cup uncooked quinoa
  • 1 14-ounce can white beans
  • 3 cups chopped tomatoes
  • 3 cups chopped fresh herbs
  • 2 cups chopped red onion
  • 2 cups chopped cucumbers
  • ½ cup chopped kalamata olives

The dressing

  • to taste olive oil
  • to taste salt
  • to taste pepper
  • to taste lemon juice

Instructions

  1. Cook the quinoa according to package directions.
  2. Chop all the vegetables.
  3. Combine all ingredients in a large bowl.
  4. Dress the salad with olive oil, salt, pepper, and lemon juice to taste.
