Lemon-scented Quinoa Salad

Tahini Dressing

Instructions
- Rinse the quinoa in a fine-meshed strainer.
- In a medium saucepan, heat the quinoa and water until boiling, then reduce heat and simmer until water is absorbed and quinoa is fluffy, about 15-20 minutes.
- Drain any extra water and set the quinoa aside.
- While the quinoa is cooking, prepare the dressing by whisking together garlic, tahini, lemon zest, lemon juice, and olive oil.
- Add hot water to the dressing to thin it out, then stir in the salt.
- In a large bowl, toss the cooked quinoa with garbanzo beans, cilantro, red onion, and half of the dressing.
- Add more dressing if desired and season with additional salt to taste.
- Serve garnished with a bit of cilantro.
