Lemon-scented Quinoa Salad

Ingredients

The salad

  • 1 cup quinoa
  • 2 cups water
  • ½ teaspoon fine grain sea salt
  • 1 can garbanzo beans
  • ½ cup cilantro, chopped
  • ½ cup red onion, chopped

Tahini Dressing

  • 1 clove garlic
  • ¼ cup tahini
  • 1 lemon zest
  • scant ¼ cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons hot water
  • scant ½ teaspoon fine grain sea salt

Instructions

  1. Rinse the quinoa in a fine-meshed strainer.
  2. In a medium saucepan, heat the quinoa and water until boiling, then reduce heat and simmer until water is absorbed and quinoa is fluffy, about 15-20 minutes.
  3. Drain any extra water and set the quinoa aside.
  4. While the quinoa is cooking, prepare the dressing by whisking together garlic, tahini, lemon zest, lemon juice, and olive oil.
  5. Add hot water to the dressing to thin it out, then stir in the salt.
  6. In a large bowl, toss the cooked quinoa with garbanzo beans, cilantro, red onion, and half of the dressing.
  7. Add more dressing if desired and season with additional salt to taste.
  8. Serve garnished with a bit of cilantro.
