Ingredients

The salad

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 can (15 ounces) chickpeas
  • 1 medium cucumber
  • 1 medium red bell pepper
  • ¾ cup chopped red onion
  • 1 cup finely chopped flat-leaf parsley

The dressing

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic
  • ½ teaspoon fine sea salt
  • to taste freshly ground black pepper

Instructions

  1. Cook the rinsed quinoa with water in a saucepan until absorbed, then let it rest.
  2. In a large bowl, combine chickpeas, cucumber, red bell pepper, onion, and parsley.
  3. In a separate bowl, whisk together olive oil, lemon juice, vinegar, garlic, and salt.
  4. Once the quinoa has cooled, add it to the vegetable mixture and drizzle with the dressing.
  5. Toss to combine and season with black pepper and additional salt if needed.
  6. Let the salad rest for 5 to 10 minutes before serving.
