Favorite Quinoa Salad

The dressing

Instructions
- Cook the rinsed quinoa with water in a saucepan until absorbed, then let it rest.
- In a large bowl, combine chickpeas, cucumber, red bell pepper, onion, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, vinegar, garlic, and salt.
- Once the quinoa has cooled, add it to the vegetable mixture and drizzle with the dressing.
- Toss to combine and season with black pepper and additional salt if needed.
- Let the salad rest for 5 to 10 minutes before serving.
