Ingredients

The salad

  • 1 cup quinoa
  • 1 can chickpeas, roasted
  • 2 cups roasted tomatoes
  • ½ cup olives
  • ½ cup feta cheese
  • ¼ cup fresh herbs

The dressing

  • 3 tablespoons Italian dressing

Instructions

  1. Cook the quinoa according to package instructions and let it cool.
  2. Roast the chickpeas until crispy.
  3. Prepare the roasted tomatoes ahead of time or use fresh cherry tomatoes.
  4. In a large bowl, combine the cooked quinoa, roasted chickpeas, roasted tomatoes, olives, feta cheese, and fresh herbs.
  5. Drizzle with Italian dressing and toss to combine.
  6. Serve immediately or refrigerate until ready to serve.
