The dressing

Instructions
- Combine the quinoa, cucumbers, cherry tomatoes, bell peppers, onion, feta cheese, chickpeas, parsley, and olives in a large bowl.
- Mix all dressing ingredients in a jar and shake well.
- Pour the dressing over the salad mixture and toss to coat evenly.
- Garnish with additional parsley and serve.
