Instructions
- Rinse the quinoa to remove bitterness, then cook it in water until absorbed.
- Mix olive oil, lemon juice, salt, and pepper in a large bowl.
- Chop and add the vegetables and herbs to the dressing, starting with the red onion.
- Once all ingredients are added, toss in the cooled quinoa and mix well.
