Ingredients

  • 2 cups dry quinoa
  • 3 ½ cups water
  • ¼ cup extra virgin olive oil
  • 6 tablespoons freshly squeezed lemon juice
  • ½ red onion, chopped
  • 1 large cucumber, chopped
  • 1 large red bell pepper, chopped
  • ½ cup fresh dill, chopped
  • ½ cup fresh flat-leaf parsley, chopped
  • 3 green onions, chopped
  • ½ cup kalamata olives, sliced (optional)
  • fine sea salt & black pepper to taste
  • ½ cup crumbled feta (optional)

Instructions

  1. Rinse the quinoa to remove bitterness, then cook it in water until absorbed.
  2. Mix olive oil, lemon juice, salt, and pepper in a large bowl.
  3. Chop and add the vegetables and herbs to the dressing, starting with the red onion.
  4. Once all ingredients are added, toss in the cooled quinoa and mix well.
  5. Adjust seasoning if necessary and add optional ingredients like olives and feta.
  6. Let the salad marinate for at least an hour or chill overnight before serving.
