Instructions
- Make the dressing by whisking together olive oil, garlic, lemon juice, vinegar, maple syrup or honey, salt, and pepper in a small bowl or jar.
- In a large bowl, combine the quinoa, spinach, cucumber, tomatoes, avocado, and green onions.
- Drizzle the salad with the dressing and gently stir until everything is coated.
- Season with salt and pepper to taste and serve.
