Ingredients

The Dressing

  • ½ cup vegetable or canola oil
  • cup fresh lime juice
  • 2 tablespoons champagne vinegar
  • 1 tablespoon sugar
  • 1 ½ teaspoons chili powder
  • ½ teaspoon kosher salt
  • 1 whole jalapeño, seeded and minced

The Quinoa Salad

  • 1 ½ cups white or red quinoa
  • 3 cups water
  • 1 15 ounce can black beans
  • 1 15 ounce can garbanzo beans
  • 1 whole red bell pepper, chopped
  • 1 whole mango, peeled and chopped
  • ½ small red onion, chopped
  • 1 whole avocado, chopped
  • ¼ cup chopped cilantro
  • ¼ cup chopped mint

Instructions

  1. Rinse the quinoa under cold water.
  2. Boil the quinoa in water with kosher salt until al dente, about 8 to 12 minutes.
  3. Drain and fluff the quinoa, then let it sit covered for 5-10 minutes.
  4. Spread the quinoa on a baking sheet to cool.
  5. Rinse and drain the black beans and garbanzo beans, then add them to the quinoa.
  6. Add chopped bell pepper, mango, red onion, avocado, cilantro, and mint to the quinoa mixture.
  7. Whisk together the dressing ingredients in a bowl.
  8. Pour the dressing over the salad and toss gently.
  9. Let the flavors meld for about 20 minutes to overnight before serving.
