Healthy Quinoa Salad

The Quinoa Salad

white or red quinoa

black beans

garbanzo beans

red bell pepper, chopped

mango, peeled and chopped

red onion, chopped

avocado, chopped

Instructions
- Rinse the quinoa under cold water.
- Boil the quinoa in water with kosher salt until al dente, about 8 to 12 minutes.
- Drain and fluff the quinoa, then let it sit covered for 5-10 minutes.
- Spread the quinoa on a baking sheet to cool.
- Rinse and drain the black beans and garbanzo beans, then add them to the quinoa.
- Add chopped bell pepper, mango, red onion, avocado, cilantro, and mint to the quinoa mixture.
- Whisk together the dressing ingredients in a bowl.
- Pour the dressing over the salad and toss gently.
- Let the flavors meld for about 20 minutes to overnight before serving.
