Ingredients

The dressing

  • cup olive oil
  • 3 tablespoons lemon juice
  • 2 cloves garlic, minced
  • to taste Kosher salt
  • to taste black pepper

The salad

  • 2 cups cooked quinoa
  • 15 ounces chickpeas
  • 1 hothouse cucumber chopped
  • ½ medium red onion, thinly sliced
  • ¼ cup chopped Italian parsley
  • ¼ cup chopped mint
  • 2 tablespoons chopped fresh dill
  • cup crumbled feta cheese
  • to taste Kosher salt
  • to taste black pepper

Instructions

  1. Combine the olive oil, lemon juice, garlic, salt, and pepper in a small bowl or jar and whisk until well combined to make the dressing.
  2. In a large bowl, place the cooked quinoa and add the chickpeas, cucumber, red onion, parsley, mint, dill, and feta cheese.
  3. Drizzle the lemon dressing over the salad and stir until combined.
  4. Season with salt and pepper to taste and serve.
