Ingredients

The salad

  • 1 whole English cucumber, diced
  • 2 cups chilled cooked quinoa
  • ½ cup diced red onion
  • ½ cup crumbled feta cheese
  • cup julienned or roughly-chopped fresh basil leaves

The vinaigrette

  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar or red wine vinegar
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon Italian seasoning
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Prepare the quinoa ahead of time and let it chill.
  2. Dice the cucumber, red onion, and chop the basil.
  3. In a large bowl, combine the cucumber, quinoa, red onion, feta, and basil.
  4. In a small bowl, whisk together the olive oil, vinegar, lemon juice, Italian seasoning, salt, and pepper.
  5. Drizzle the vinaigrette over the salad and toss to combine.
  6. Serve immediately or refrigerate until ready to serve.
