Greek Quinoa Salad

The salad

red bell pepper, seeded and finely diced

finely chopped green onion

The vinaigrette

olive oil

Instructions
- Rinse the quinoa in a strainer.
- In a medium saucepan, combine quinoa and 2 cups of water, then bring to a boil over medium heat.
- Once boiling, reduce heat to low, cover, and simmer for 15 minutes.
- Remove the cover and fluff the quinoa.
- Chop the bell pepper, green onion, and dill, and place them in a large bowl.
- Add the fluffed quinoa to the bowl and mix well.
- In a separate bowl, whisk together the vinaigrette ingredients.
- Toss the salad with the vinaigrette and add salt and pepper to taste.
