Greek Quinoa Salad

Ingredients

The salad

  • 1 cup quinoa
  • 1 medium red bell pepper, seeded and finely diced
  • ½ cup finely chopped green onion
  • 2 tbsp chopped fresh dill
  • ½ cup chopped kalamata olives
  • optional feta cheese

The vinaigrette

  • ¼ cup olive oil
  • 1-2 medium lemons (juice from)
  • 1-2 cloves garlic, mashed
  • 1 tsp oregano
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Rinse the quinoa in a strainer.
  2. In a medium saucepan, combine quinoa and 2 cups of water, then bring to a boil over medium heat.
  3. Once boiling, reduce heat to low, cover, and simmer for 15 minutes.
  4. Remove the cover and fluff the quinoa.
  5. Chop the bell pepper, green onion, and dill, and place them in a large bowl.
  6. Add the fluffed quinoa to the bowl and mix well.
  7. In a separate bowl, whisk together the vinaigrette ingredients.
  8. Toss the salad with the vinaigrette and add salt and pepper to taste.
