Salad

Instructions
- Combine all dressing ingredients in a bowl or jar and season to taste.
- Cook the quinoa according to package directions.
- In a large bowl, combine the cooked quinoa with all salad ingredients and toss gently.
- Spread hummus in the bottom of a serving bowl, top with quinoa salad and sliced avocado.
- Garnish with toasted pine nuts and mint before serving.
