Loaded Greek Quinoa Salad

Ingredients

Olive Dressing

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • cup finely chopped kalamata olives
  • ½ juice from a lemon
  • to taste pepper
  • to taste crushed red pepper flakes

Salad

  • 1 cup dry quinoa
  • 1 roasted red pepper
  • 2 Persian cucumbers sliced
  • 1 zucchini sliced or cut into ribbons
  • 1 cup cherry tomatoes
  • ½ cup oil pack sun-dried tomatoes
  • ½ cup marinated artichoke hearts
  • 1 small bunch watercress or 2 handfuls of arugula
  • 1 large handful fresh basil and mint
  • 4 radishes sliced
  • 1 14-ounce can chickpeas
  • 1 block feta cheese
  • 1 cup plain hummus
  • 1 avocado sliced
  • to taste toasted pine nuts

Instructions

  1. Combine all dressing ingredients in a bowl or jar and season to taste.
  2. Cook the quinoa according to package directions.
  3. In a large bowl, combine the cooked quinoa with all salad ingredients and toss gently.
  4. Spread hummus in the bottom of a serving bowl, top with quinoa salad and sliced avocado.
  5. Garnish with toasted pine nuts and mint before serving.
