Ingredients

The Salad

  • 4 cups spinach or mixed greens
  • 1 cup sliced cucumber
  • ¾ cup halved grape or cherry tomatoes
  • ½ cup sliced red onion
  • ½ cup canned, jarred, or frozen artichoke hearts
  • ½ cup crumbled feta cheese
  • ¼ cup pitted and halved Kalamata olives
  • 1 small avocado
  • 1 cup cooked and cooled quinoa

The Dressing

  • cup avocado oil or extra-virgin olive oil
  • 2 tablespoons fresh oregano
  • 1 lemon juice
  • to taste salt
  • to taste black pepper

Instructions

  1. Combine all salad ingredients in a large bowl and set aside.
  2. In a small bowl or jar, whisk together the dressing ingredients until smooth.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Chill in the refrigerator until ready to serve.
