Ingredients
The Salad

spinach or mixed greens

sliced cucumber

halved grape or cherry tomatoes

sliced red onion

canned, jarred, or frozen artichoke hearts

crumbled feta cheese

cup
pitted and halved Kalamata olives

avocado

cup
cooked and cooled quinoa
The Dressing
⅓
cup
avocado oil or extra-virgin olive oil

tablespoons
fresh oregano
1
lemon
juice
to taste
salt
to taste
black pepper
Instructions
Combine all salad ingredients in a large bowl and set aside.
In a small bowl or jar, whisk together the dressing ingredients until smooth.
Pour the dressing over the salad and toss gently to combine.
Chill in the refrigerator until ready to serve.
