Marinated Gigante Beans

The marinade

Instructions
- In a large bowl, combine the gigante beans, olive oil, lemon juice, parsley, sun-dried tomatoes, garlic, lemon zest, salt, red pepper flakes, and black pepper.
- Stir the mixture to coat the beans well, adding more olive oil if necessary.
- Cover the bowl and refrigerate for at least 2 hours, preferably overnight.
- Before serving, season to taste and enjoy.
