Slow Cooker Gigante (White) Beans

Ingredients

  • 8 oz dried white beans (such as Gigante, Great Northern, or Cannellini)
  • 1 leaf bay leaf
  • ½ teaspoon red pepper flakes
  • a few cloves garlic (smashed)
  • 2 cups onions (chopped)
  • 1.5 cups crushed tomatoes
  • a few sprigs thyme
  • 1 piece parmesan rind (optional)
  • 4 cups water
  • ¼ cup olive oil
  • 2 teaspoons kosher salt (or to taste)
  • to taste fresh cracked pepper
  • to taste shavings of Parmigiano Reggiano (for serving)
  • to taste toasted bread (for serving)

Instructions

  1. Place all ingredients except for the Parmigiano Reggiano and toasted bread into the slow cooker.
  2. Cook on high for 6 to 12 hours, depending on the type of beans used.
  3. Taste the broth and adjust salt as needed when the beans are done.
  4. Serve the beans ladled over toasted bread and top with Parmigiano Reggiano and cracked pepper.
