Ingredients

The beans

  • 3 cups vegetable broth

Instructions

  1. Rinse the black beans in a fine-mesh sieve and remove any stones or broken beans.
  2. In a slow cooker, combine the rinsed black beans, diced onion, grated garlic, tomato paste, chili powder, cumin, smoked paprika, salt, and vegetable broth.
  3. Cover the slow cooker and cook on high for 4 ½ to 5 ½ hours, checking for tenderness at the 4 ½ hour mark.
