Ingredients

  • 2 cloves garlic
  • 1 medium yellow onion
  • 2 ribs celery
  • 2 medium carrots
  • 1 lb. black beans (uncooked)
  • 1 cup salsa
  • 1 Tbsp chili powder
  • ½ Tbsp ground cumin
  • 1 tsp dried oregano
  • 4 cups vegetable broth
  • 2 cups water

Instructions

  1. Mince the garlic, dice the onion and celery, and grate the carrots.
  2. Rinse the black beans and remove any debris.
  3. Combine all ingredients in a slow cooker and stir well.
  4. Cover and cook on high for 6-8 hours until the beans are very soft.
  5. Blend the soup until thick and creamy, leaving some beans whole if desired.
  6. Taste and add salt if necessary, then serve with toppings.
