Slow Cooker Black Bean Soup

Instructions
- Mince the garlic, dice the onion and celery, and grate the carrots.
- Rinse the black beans and remove any debris.
- Combine all ingredients in a slow cooker and stir well.
- Cover and cook on high for 6-8 hours until the beans are very soft.
- Blend the soup until thick and creamy, leaving some beans whole if desired.
- Taste and add salt if necessary, then serve with toppings.
