Instructions
- Soak the dried beans overnight or boil them for five minutes, then drain.
- Transfer the beans to a slow cooker and add the broth, water, red onion, sun-dried tomatoes, green chilis, smoked paprika, cayenne pepper, and salt.
- Cook on low for 6-8 hours until the beans are soft.
- Use an immersion blender to puree the soup slightly.
- Garnish with cilantro, scallions, crushed tortilla chips, and avocado as desired.
