Ingredients

The soup

  • 3 cups dried black beans
  • 4 cups broth
  • 2 cups water
  • ¼ cup chopped red onion
  • ¼ cup chopped sun-dried tomatoes
  • 4 oz diced green chilis
  • 1 tsp smoked paprika
  • ¼ tsp cayenne pepper
  • 2 tsp salt

The garnish

  • to taste Cilantro
  • to taste scallions
  • to taste crushed tortilla chips
  • to taste avocado

Instructions

  1. Soak the dried beans overnight or boil them for five minutes, then drain.
  2. Transfer the beans to a slow cooker and add the broth, water, red onion, sun-dried tomatoes, green chilis, smoked paprika, cayenne pepper, and salt.
  3. Cook on low for 6-8 hours until the beans are soft.
  4. Use an immersion blender to puree the soup slightly.
  5. Garnish with cilantro, scallions, crushed tortilla chips, and avocado as desired.
