Black Bean Soup

Ingredients

The base

  • 1 tbsp Olive oil
  • 1 medium Green bell pepper
  • 1 tbsp Onion (minced)
  • 1 tsp Garlic powder
  • 3 cups Chicken broth (reduced sodium)
  • 2 15-oz cans Black beans (drained)

The spices and seasoning

  • ½ tbsp Smoked paprika
  • ½ tbsp Ground cumin
  • 1 tsp Chili powder
  • 1 tbsp Lime juice
  • 1 cup Fresh cilantro (chopped)
  • to taste Sea salt

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add bell pepper, onion, and garlic powder, cooking until soft.
  3. Stir in chicken broth, black beans, smoked paprika, cumin, and chili powder.
  4. Bring to a gentle boil, then reduce heat and simmer for 25 minutes.
  5. Blend about 3/4 of the soup until smooth, then return to the pot.
  6. Stir in lime juice and cilantro, adjusting salt to taste.
