Easy Black Bean Soup

Ingredients

The soup base

  • 1 tablespoon extra virgin olive oil
  • 1 large yellow onion, chopped
  • 3 pieces bell peppers, chopped
  • 6 cloves garlic, chopped
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 4 15-ounce cans black beans, rinsed and drained
  • 4 cups low sodium chicken broth
  • 1 tablespoon lime juice
  • to taste salt and pepper

Optional toppings

  • to taste sliced scallions
  • to taste diced avocado
  • to taste cilantro
  • to taste diced radishes
  • to taste tortilla chips

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté onions with a pinch of salt until translucent.
  2. Add bell peppers, garlic, cumin, chili powder, oregano, salt, and pepper, cooking until the peppers are softened.
  3. Pour in black beans and broth, bring to a boil, then reduce to a simmer for 20-30 minutes.
  4. Blend half of the soup until smooth and return it to the pot.
  5. Stir in lime juice and adjust seasonings before serving with toppings.
