Crock Pot Black Bean Soup

Ingredients

  • 3 15-oz. cans black beans
  • 1 4-oz. can green chilis
  • 1 cup chunky salsa
  • 1 cup vegetable broth
  • ½ medium white onion
  • 3 tablespoons minced garlic
  • 2 tablespoons cumin
  • tablespoons chili powder
  • 1 teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Place all ingredients in a slow cooker and mix well.
  2. Cover and cook on high for 2 hours, stirring halfway through.
  3. Uncover and mix well again.
  4. Remove 3 cups of the soup and blend until smooth.
  5. Return the blended soup to the slow cooker and mix well.
  6. Serve topped with roasted or sautéed vegetables.
