Crock Pot Black Bean Soup

Instructions
- Place all ingredients in a slow cooker and mix well.
- Cover and cook on high for 2 hours, stirring halfway through.
- Uncover and mix well again.
- Remove 3 cups of the soup and blend until smooth.
- Return the blended soup to the slow cooker and mix well.
- Serve topped with roasted or sautéed vegetables.
