Slow Cooker Smoky Refried Black Beans

Ingredients

The beans

  • 1 lb dry black beans

The broth and spices

  • 3 cups vegetable broth
  • 2 tbsp olive oil
  • 6 cloves garlic
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • to taste additional salt
  • to taste lime juice

Instructions

  1. Rinse and sort the beans, then soak them in water overnight.
  2. Drain and rinse the soaked beans, then return them to the slow cooker.
  3. Add vegetable broth, olive oil, garlic, onion powder, cumin, chili powder, smoked paprika, and salt to the beans and stir.
  4. Cook on low for 8-10 hours until beans are tender.
  5. Allow beans to cool slightly, then check the liquid level before pureeing.
  6. Puree the beans to your desired consistency using an immersion blender.
  7. Return the pureed beans to the slow cooker and cook on low for an additional 30 minutes to thicken.
  8. Adjust the consistency with more broth if too thick, or cook longer if too thin.
  9. Season with additional salt and lime juice before serving.
