Ingredients

The beans

  • 2 cups pinto beans (dry, rinsed)

The aromatics

  • 1 onion (peeled and halved)
  • ½ jalapeño (seeded and chopped or other hot pepper)
  • 2 cloves garlic (minced)

The seasonings

  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • 1 pinch cumin

The liquid

  • 6 cups water

Instructions

  1. Combine all ingredients in the slow cooker.
  2. Cook on high for 8 hours, or overnight while you sleep.
  3. Remove the larger onion chunks and drain excess liquid, saving it if desired for consistency.
  4. Mash the remaining beans with a potato masher to achieve the desired texture.
