Sautéed Asparagus with Fava Beans

Ingredients

The vegetables

  • 2 pounds fresh fava beans (in the shell), about 2 cups shelled
  • 1 pound fresh asparagus, trimmed, chopped into 2-3 inch pieces
  • 2 pieces green onions, sliced (tops and bulb)
  • 2 cloves garlic, minced

The herbs and seasoning

  • ¼ cup fresh mint leaves, chopped coarsely
  • ¼ cup fresh basil leaves, chopped coarsely
  • 1 piece lemon, juiced and zested
  • to taste sea salt and black pepper (optional)

The oil

  • 1 ½ tablespoons extra virgin olive oil

Instructions

  1. Heat olive oil in a large saucepan or skillet.
  2. Sauté fava beans, asparagus, onions, and garlic for about 6-7 minutes until the vegetables are crisp-tender and bright green.
  3. Remove from heat and toss in lemon juice, lemon zest, mint, and basil leaves. Season with salt and pepper if desired.
  4. Serve immediately.
