Ingredients

The vegetables

  • 20-30 pods fava beans
  • 1 bunch thin asparagus
  • 1 ½ cups peas

The seasoning and garnishes

  • 1 lemon (zest)
  • splash of cream
  • to taste fine grain sea salt
  • to taste extra virgin olive oil
  • to taste pecorino cheese (or Parmesan)
  • optional edible flowers

Instructions

  1. Shell the fava beans and set them aside.
  2. In a cold skillet, add olive oil, salt, and water, then heat over medium-high.
  3. Once the water is bubbling, add asparagus and cover, cooking until barely tender.
  4. Stir in the peas and cook uncovered for a short time.
  5. Add lemon zest and a splash of cream, then serve garnished with edible flowers.
