Fava Bean and Pecorino Salad

fresh fava beans, shelled

freshly ground black pepper

Pecorino Romano

extra-virgin olive oil

1 to 2
lemons

finely chopped parsley (optional)
Instructions
- Boil a large pot of water and cook the fava beans for one minute.
- Drain the beans and plunge them into an ice bath to cool, then drain again.
- Peel the fava beans and place them in a mixing bowl.
- Season the beans with salt and pepper to taste.
- Break the Pecorino into large chunks and add to the bowl.
- Drizzle olive oil over the mixture and toss well.
- Add lemon juice to taste and toss again.
- If using, add parsley and serve.
