Paleo Pumpkin Pancakes

Ingredients

  • ½ cup almond butter
  • ½ cup pumpkin puree
  • 2 whole eggs
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon baking soda
  • 1 tablespoon maple syrup
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond butter, pumpkin puree, eggs, pumpkin pie spice, baking soda, and maple syrup, and mix well.
  3. Add the vinegar and stir again to help it react with the baking soda.
  4. Scoop the batter onto the baking sheet using a 1/4 cup measure to form pancake shapes.
  5. Bake for 10 to 12 minutes until the pancakes are fluffy and golden.
  6. Let the pancakes cool briefly, then serve warm with your favorite toppings.
