Instructions
- In a mixing bowl, combine pumpkin, milk, egg, maple syrup, and oil, whisking until smooth.
- Add almond flour, oat flour, baking soda, baking powder, salt, and pumpkin pie spice, and whisk until combined to form a thick batter.
- Grease a skillet and heat it to medium-low. Pour ¼ cup of batter onto the skillet and cook for about 3 minutes per side, flipping when bubbles form and cooking until golden.
