Ingredients

  • ½ cup pumpkin puree
  • ¼ cup milk of choice
  • 1 large egg
  • 1 tbsp avocado oil
  • 2 tbsp pure maple syrup
  • cup super fine blanched almond flour
  • cup oat flour
  • 2 tsp pumpkin pie spice
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp fine sea salt

Instructions

  1. In a mixing bowl, combine pumpkin, milk, egg, maple syrup, and oil, whisking until smooth.
  2. Add almond flour, oat flour, baking soda, baking powder, salt, and pumpkin pie spice, and whisk until combined to form a thick batter.
  3. Grease a skillet and heat it to medium-low. Pour ¼ cup of batter onto the skillet and cook for about 3 minutes per side, flipping when bubbles form and cooking until golden.
